Healthy Recipe Round-Up #1

I’ve taken a big interest in the foods we eat as a family lately, and I’ve started incorporating whole wheat breads, lot of vegetables, foods rich in nutrients and fibers, and eating less meat.

If you’re curious how you can change your family’s eating habits, the first tip I can give you is to plan your meals and snacks, and make a shopping list based off of your plan. This limits the amount of snack foods and times where you have no idea what to make – if you at least have a plan and healthy ingredients to back those plans up, you can easily make snacks and food when you and your family is hungry.

I use Pinterest when I’m planning my meals, it’s easy for me to pin a recipe and then access it on my iPad or phone while I’m cooking or shopping for ingredients. I have a Pinterest board called Healthy Meal Planning where I post recipes that I am looking forward to making. 

If you look at the board, you’ll notice that I’m pinning mostly vegan or vegetarian meals. Am I vegan or vegetarian? No. However, when I’m searching out healthy recipes, I am looking for ones with vegetables that I like, and protein in forms that are low-fat. I’ve also noticed that if I don’t eat meat for a few days, I feel better. My body feels better. But having some grilled fish, chicken or prawns will also show up on my menus.

Another caveat for meal planning? My kitchen does not possess a stove-top, which means anything in a pot has to be somehow converted into a slow cooker recipe – and my oven is a toaster oven. I also have a counter top grill/griddle/panini press that I use to “fry” up onions and peppers. So far? Everything’s worked out incredibly well. I make delicious meals, I’ve learnt how to use my slow cooker to cook rice, quinoa and lentils, and my family is eating healthy and nutritious meals.

These tacos from Oh She Glows were absolutely amazing. I cooked the lentils in the slow cooker, then brought it all together in the food processor. It actually tastes like taco meat. I served mine in lettuce wraps, while the family had their wrapped in whole wheat wraps.

I used to love watching Giada De Laurentis’ shows on the Food Network, and I own a few of her cookbooks. This salad was absolutely delicious and super filling. I roasted the beets differently, using my tried and true method which can be found here. I also drizzled my favourite Nonna Pia’s balsamic reduction on top. I served this with baked chicken breasts. Mexican Quinoa

This dish from Damn Delicious is so good that even my kids were scooping it up. I used all the ingredients except for the jalapeno (my kids aren’t fans of spice, I added hot sauce to my bowl), and threw it all in the slow cooker on low for 4.5 hours. It turned out perfectly! My husband ate his in a whole wheat wrap.

This veggie burger from Oh She Glows was absolutely delicious and paired perfectly with the cilantro-lime sauce in the recipe. This one is toddler approved as well, my little guy loved it!

I made these for a couple of our hiking excursions and it’s great. We loved all the combined flavours (pickles, mustard, dill!), and I could see putting the chickpea salad on some greens as well. This recipe was from Oh She Glows.
